    3 x wholegrain bread slices, crusts removed
    2 tsp oil
    3 shallots (or spring onion)
    3 c baby spinach leafs
    3 eggs
    185 g tuna in springwater, drained
    1/2 cup cheese, grated


Preheat oven to 180 c
Oil a six hole muffin tin
Line tin holes with bread
Bake for 12 mins or until golden and then cool.

In a frying pan heat shallots and spinach until shallots have softened and spinach is wilted (approx 2-3 mins) then cool.

Whisk egg lightly and season to taste.

Combine spinach mix, tuna and half the cheese

Divide mixture between six bread cases and top with reamining cheese

Bake for 15-20 mins at 160 c
