    2/3 cup raw barley
    1 Tbsp olive oil
    1 cup chopped onions
    4 cups chopped carrots
    4 cups chopped cauliflower "florets"
    4 cups chopped mushrooms
    beef, chicken or vegetable stock to cover


Saute barley and onions in olive oil till the onions begin to soften. Add remaining ingredients. Bring to a boil and then reduce heat and simmer till tender - about 30 minutes.

Makes 10 1 cup servings.
