    2 Portabella Mushroom Caps
    1 oz Reduced Fat Feta Cheese
    1/4 cup Reduced Fat Shredded Mexican Cheese (Sargento used in nutrition calculator)
    3 Campari Tomatos
    1 cup Spinach
    2 Cloves of Garlic
    1 tbsp Olive Oil
    Cooking Spray (Canola)

    Garlic Powder


1. Cut tomatos into smaller than bite-size pieces.
2. Combine with crumbled feta and shredded mexican.
Add desired amounts of oregano, garlic powder and parsley
3. Turn broiler on lower setting.
4. Cover each mushroom cap in 1/2 tbsp olive oil
5. Broil for approximately 10 minutes
6. Divide cheese mixture evenly and place inside caps
7. Place back in broiler, for around 5 minutes or until cheese begins to brown on top
8. In a skillet, "sauté" spinach and chopped garlic in minimal amount of cooking spray
9. Remove caps from oven
10. Cover with sautéed spinach and serve!

Serving Size: Makes 2 1-mushroom servings
