    4 tbs olive oil
    2 small onions, chopped
    4 cloves garlic, minced
    1 medium eggplant, cubed
    1 medium summer squash
    1 cup baby portebellas, chopped
    1 lb mild chicken sausage, removed from casing
    1 can diced tomatoes, drained
    1 cup marinara sauce
    1.5 cups italian cheese


1. Heat 1 tbs olive oil in skillet over medium. Add onions and saute until soft. Turn heat to low and add garlic, stirring often.
2. Remove onions from heat and place into glass cassarole dish.
3. Turn stove back to medium, and add another tbs of oil and eggplant. Saute until soft, then add to glass dish.
4. Repeat with squash, mushrooms, and sausage (no oil needed for sausage).
5. Add tomatoes and sauce to glass dish, along with rosemary, oregano and black pepper. Mix well.
6. Top with cheese and bake at 350 for 30 minutes, or until bubbling.
