Ingredients

    3 cups Black Beans (2 cans)
    1 cup Tomatoes diced
    1 cup Onions finely chopped
    1/2 Japaleno chopped - remove seeds
    1 cup Corn (fresh or frozen)
    6 tbsp Cilantro chopped

    Dressing
    2 Limes
    2 tsp of oil
    2 tsp of salt
    1 dash of black pepper

Tips

You can adjust the level of spice but removing the seeds from the jalapeno. If you like it hot, use the whole pepper instead of half


Directions

Drain and rinse black beans. Thaw corn (run under cold water and drain). Drain tomatoes, or chop a fresh tomato. Chop onions, cilantro, and jalapeno. Combine ingredients in a large mixing bowl. Squeeze two limes. Add oil to the lime juice. Add salt and pepper, add a little at a time to adjust to your liking. Whisk the liquids and seasonings together, then pour over the beans and veggies!

Serving Size: Makes about 8 1-cup servings
