    3 boneless, skinless chicken breasts
    1 tblsp. margarine
    1 onion, diced
    8 large mushrooms, sliced
    1 can cream of mushroom soup
    2 ozs. white wine
    1/2 cup milk
    pepper, thyme to taste
    1 bay leaf


great on mashed potatoes!


melt margarine over medium heat in a large non-stick skillet. add chicken breasts and brown on both sides. remove from pan and add onions, mushrooms, and pepper and thyme. cook until onion turns translucent and mushrooms give off juices. Add white wine and boil until half the liquid is reduced. Add soup and bay leaf; bring back to boil. Add chicken to pan and reduce heat to low. Cover and simmer, turning chicken once. Remove chicken again and add milk; stir and heat through. Return chicken to skillet and heat with sauce.

Serving Size: makes 3 chicken breasts with about 1/2 cup sauce each
