A quick easy soup using cooked chicken A quick easy soup using cooked chicken
Number of Servings: 4


    Carrots, raw, 2 medium, diced
    Celery, raw, 1 cup, diced
    Onions, raw, 1 cup, chopped
    Canned Tomatoes, 1 can diced
    Chicken Broth, 1.5 cup (8 fl oz)
    Water, tap, 4 cup (8 fl oz)
    Peas, frozen, 0.5 cup
    *Spinach, cooked, .5 cup
    Chicken Breast (cooked), no skin, 1 breast, bone and skin removed, diced


Saute fresh vegetables in one tablespoon olive oil until soft. Add canned tomatoes, broth, and water. Bring to boil. Add spinach, peas and chicken. Simmer. Season as desired with herbs, salt and pepper.
