Easy crockpot meal! Easy crockpot meal!
Number of Servings: 2


    1 cup uncooked brown rice
    3/4 cup lentils, rinsed
    1/2 cup chopped green peppers
    1 cup sliced or chopped carrots
    1 medium celery stalk, chopped
    1 tablespoon curry powder
    1/2 tablespoon garlic powder
    1/2 tablespoon cumin
    2 cups low sodium chicken broth
    1/2 package frozen spinach, partially thawed and squeezed out


Combine all ingredients in slow cooker

Cook on low for 6 hours

Serving Size: Makes 2 heaping servings
