Ingredients

I came up with this pairing off the cuff to jazz up the lentils. This serves one person.

Cook lentils in approximately a cup of water, adding more if it needed. Add in frozen spinach half way through the cooking proces. I cook my lentils around 20 minutes, watching constantly to see if I need to add more water.

Sqeeze the lemon over the fish and spice it according to your taste. I enjoy pepper, or a middle eastern spice mix on mine. Put under the broiler for 7 minutes.

Plate the fish and lentils, and side with a quarter cup of whole berry cranberry sauce. The cranberry adds a great zip to the sour of the lemon and the blah of the lentils.
