Ingredients

    8 oz. Sweet Potato
    4 oz. Ground Turkey
    1/3 cup drained salsa
    3/4 tsp Southwest Seasoning - no salt
    2 Tbsp Roasted Green Salsa
    2 Tbsp Fat Free Greek Yogurt

Directions

Poke potato with fork 5 times on all sides. Put in bowl in microwave and cover with paper towel. Microwave on high for 3 minutes. Flip potato and microwave 2-4 min longer or until tender.

Mix turkey & seasoning. Mist skillet with olive oil spray. Cook turkey till no longer pink.

Top the potato with the turkey, both salsas, & yogurt.

    Incredible!
    Love this! This is yummy and the only thing I do different here is use Jimmy Dean Turkey Sausage Crumbles instead of the ground turkey. We always have the crumbles in the freezer. - 2/20/13
