Number of Servings: 11


    3 eggs, large
    2 bananas, very ripe
    1/4 cup coconut oil
    10 drops stevia
    3 dates, pitted
    1/4 cup coconut flour
    1/4 t. sea salt
    1/2 t. baking soda


Using a VitaMix or blender, add: eggs, bananas, coconut oil, stevia and dates. Blend until smooth. Add in coconut oil, sea salt (if using regular salt, reduce the salt to 1/8 t.) , and baking soda. Blend again until smooth. Place 1/4 cup into 11 lined muffin tins. Bake at 350 degrees F for 20-24 minutes. Optional: fold in blueberries, chocolate chips, walnuts
