Introduction

Ingredients

    I huge head of CaUliflower, chopped or cut flowerets
    1 Leek, sliced white and 1/2 of green
    2 stalks Celery, chopped
    3 cloves garlic, minced
    2-3 cups Chicken Broth, 3 cup (8 fl oz) (remove)
    1-3 Beef Broth Central Market Organics, 1 cup (remove)
    2 Tbsp. Extra Virgin Olive Oil, 2 tbsp (remove)

Directions

Saute chopped leek, celery, & garlic in olive oil until softened; add cauliflower and broths. Bring to boil; reduce heat to low and simmer gently until vegetables are "mushy." Remove from heat and let cool slightly. Blend with immersion blender until creamy and smooth. Adjust consistency as desired with beef broth. Reheat gently and serve hot with plenty of fresh pepper.
