Ingredients

    Vegetables:
    1 large head of cabbage
    1 large bell pepper
    1 large onion (red and/or white)
    3 medium carrots
    1/4 cup fresh cilantro

    Dressing:
    1 cup cider vinegar
    1/2 cup vegetable oil
    1/2 cup sugar
    1 tsp salt
    1 tsp black pepper
    2 tsp dry mustard
    2 tsp celery seed
    1 oz lime juice
    dash of cayenne pepper

Tips

This can be a colorful and tasty side dish if you opt for red onions and red bell peppers. Adjust quantities of ingredients to taste. It could probably even use less sugar if you don't want a sweeter coleslaw.


Directions

Finely chop and grate all vegetables. Combine in large bowl. In a saucepan, combine dressing ingredients and bring to a boil. Pour over vegetables and mix. Cover and chill for at least one hour, preferably overnight.
