    2 Acorn squash cut in half and gut the seeds out. Chop the white onion and make sure garlic is clove.


Careful with the squash shell it is fragile if scraping too close to it!.


Cut in half acorn squash. De-seed the squash and bake at 375 degrees for 20-25 minutes face down on parchment paper. While squash is cooking, chop onion and garlic and throw into pan with a little bacon fat. Cook on medium till onions become see through then add pork ground pork sausage into pan and cook through. When squash is ready spoon out the squash leaving the shell and add to pan. Once mixed together add back to the squash and fill to the rim. Place in a baking dish and top the squash with a raw egg for 20 more minutes in the oven. Done!!
