    Mini Carrot Oatmeal Muffins

    1/2 cup unsweetened applesauce
    3/4 cup brown sugar
    1 large egg
    1 tsp. vanilla extract
    1/2 cup grated carrots
    1 cup whole wheat flour
    1 cup rolled oats
    1 tsp baking powder
    3/4 tsp. baking soda
    1 tbsp cinnamon
    Optional: chopped nuts and/or raisins

    In a mixing bowl combine grated carrots, applesauce, egg, vanilla and brown sugar.
    In a second bowl, toss together all dry ingredients.
    Add the two mixtures together and beat until just combined. Do not over beat.
    If desired, fold in nuts and/or raisins.
    Put batter into lightly greased mini muffin pans.


Preheat oven to 400F

Bake for 15 minutes
