    1 Eggplant, sliced
    3 Large Baby Zucchini, sliced
    2 C sliced Mushrooms
    2 C canned (or Fresh) Tomatoes (slice if Fresh)
    2 C Mozzarella
    1 C Cottage Cheese
    3 C Fresh Spinach


The calories will be affected by what type of cottage cheese and mozzarella cheese you choose to use. This was based on Whole Milk Mozzarella and 4% Cottage Cheese.


Layer zucchini, then eggplant, spinach, tomato, mushroom, cottage cheese, then remaining veggies until you reach the top of a large casserole dish. Bake in oven for 45 minutes at 350. Top with Mozzarella, put back in for 10-15 minutes until Mozzarella is melted.

Serving Size: Makes 4-6 Servings
