Ingredients

Whole Grain Quinoa, 1 cup uncooked
Milk, nonfat (skim milk), 2 cup
Egg, fresh, 2 large
Maple Syrup, .25 cup
Pears, fresh, 1 pear, medium (or apple)(chopped into small cubes-skin on is fine-personal choice)
Strawberries (or any fruit), frozen, unsweetened, 1 cup
Cinnamon, ground, 2 tbsp (and an allspice/ooptional)
Walnuts, .25 cup, chopped(any nut/optional)
Whole Ground Flaxseed- 2 Tbsp. (optional)
Tips
Any Fruit can be used
Nuts and Flax are optional
Served warm with a little extra milk over the top
Directions
Prepare a 9x11 pan with a small amount of cooking spray: preheat oven to 350
coat the dry quinoa with cinnamon and allspice then poor over bottom of baking dish
then layer frozen fruit, apple or pear and nuts
beat the 2 eggs, add in milk and syrup then poor mixture over top of quinoa and fruit
Do NOT stir but try submerge fruit if it floats to top
Bake for approx an hour, some liquid left is good
serve Warm
