    1 Tsp coconut oil, melted
    1 Tsp butter, melted
    1 TBsp worth of chocolate (sweetened baking chocolate)
    1 Tsp brown sugar
    2 TBsp white sugar
    3 TBsp coconut milk (or regular)
    1 TBsp egg white
    1 TBsp applesauce
    3 TBsp flour
    1/4 tsp baking powder
    1 dash salt

    1 TBsp biscoff "cookie butter"
    4 mini Reese's PB cups


In a cereal-sized micro-wave safe bowl or ramekin, melt coconut oil, butter, and baker's chocolate in microwave (15 seconds or so). Stir in both sugars until dissolved. Add coconut milk, egg white, and applesauce.

In a small separate bowl, combine flour, baking powder and salt. Slowly mix into the the other bowl until combined. Microwave between 60-90 seconds.

Place a few mini reese's pb cups in before microwaving. If the tops peek out, cover them with batter. My husband loves biscoff, so I surprised him and secretly cut the tops off the pb cups, carefully removed the pb filling and replaced it with biscoff spread. What a pleasant surprise!
