    1 bulb fennel, thinly sliced
    4 medium red potatoes, thinly sliced
    1 tbsp olive oil
    1/3 c. finely shredded parmesan cheese
    salt and pepper to taste


thinly slice fennel and potatoes
toss lightly with olive oil
season with salt and pepper
bake at 400* F for 45 minutes
remove from oven and sprinkle with shredded parmesan
