    1 tblsp. margarine
    1 medium onion, chopped
    1/2 cup green pepper, chopped
    1/2 cup red pepper, chopped
    6 medium mushrooms, sliced
    1 cup potato, diced
    1 cup fresh spinach
    3 Brown n Serve pork sausage links, chopped
    3 eggs, beaten with 1 tblsp. water


tastes great with salsa over top! you can also add shredded cheese, which is not included in nutrition facts.


melt margarine in a medium-sized non-stick skillet. Add onion, peppers, mushrooms, and potato. Cook until onions and peppers soften and potato cubes can be pierced with fork.Add sausages and cook until softened. Add spinach and cook until wilted. Pour in egg mixture and "scramble" with rest of mixture. Cook until eggs are done.
