    1 1/2 cups Minute Rice
    1 1/2 cups Meijer Reduced Sodium Chicken Broth
    1 1/4 cups cooked chopped broccoli
    2 cups Cheddar Cheese
    1/2 cup Kraft Lite Ranch Dressing
    2 eggs, lightly beaten
    Salt and Pepper to taste


Prepare rice as directed on package, using chicken broth instead of water. Place rice in large bowl and let cool slightly. Add remaining ingredients, using only 1 1/2 cups of the cheese and stir until combined. Transfer mixture to 12 well-greased muffin cups. Top with remaining cheese. Bake 25 minutes at 350 degrees or until tops are lightly browned and edges are starting to get crispy. Loosen around edges of each cup with a knife and lift out with a fork.
