    *Earth Balance Soy Free, 1 tbsp
    Onions, raw, 1 cup, chopped
    Red Ripe Tomatoes, 8 Italian tomato, sliced
    Mixed Vegetables, frozen, 1 package (10 oz)
    Almonds, .25 cup, slivered
    *Brown Rice, medium grain, 2 cup, cooked
    Vegetable Broth, 1 cup
    Salt, 1 tsp
    Pepper, black, 1 tsp


Cook frozen veggies in micro according to directions.
Saute onions in earth balance until soft.
Add tomatoes and almonds and cook until tomatoes are soft.
Add veggies and stir.
Stir in rice. Add broth and salt & pepper and simmer 5 minutes.

Remove from heat. Add any optional toppings (salsa, cheese, hot sauce, etc (not included in nutrition).
