Introduction

A breakfast cookie made of simple and healthy ingredients. A breakfast cookie made of simple and healthy ingredients.
Number of Servings: 16

Ingredients

    1 cup chopped Cranberries (or other fruit)
    1.5 cups quick oats (uncooked)
    2 medium Bananas, mashed
    0.5 cup Greek Yogurt (I used Chobani nonfat strawberry)

    I also added a couple of spashes of Torani Sugar-Free Raspberry Syrup (0 cal)

    Some other add-in options could be: vanilla extract, cinnamon, other fruits (dried or fresh), nuts, flax seed, etc.
    These items are not calculated into the nutritional information

Directions

Preheat heat oven to 350 degrees.

Mash bananas with a fork and add other ingredients. Mix well.

Drop mixture, by spoonfuls, onto a sprayed or parchment paper lined cookie sheet & flatten cookies into rounds. (I used my hands)

Bake approx. 20 - 30 minutes, or until golden.

Remove from oven & let cool on cookie sheet for 5 minutes, then move to cooling rack.

Store in a covered container when completely cool.

Enjoy for breakfast or dessert!
