Ingredients

    3 cups pumpkin puree
    1 1/2 cup vegetable oil
    2 cups sugar, refined
    2 cups sugar, demerara
    6 jumbo-xl eggs
    2 1/4 cups all purpose flour
    2 1/2 cups whole wheat flour
    1 1/2 tsp baking soda
    1 1/2 tsp baking powder
    1 1/2 tsp salt
    1 1/2 tsp cinnamon
    1 1/2 tsp clove
    1 1/2 tsp nutmeg

Tips

refined sugar can be substituted for the demerara and all purpose flour can be used in place of the whole wheat flour


Directions

Preheat oven to 350, grease and flour pan. Bake for 45 min to 1 hour depending on pans and ovens. Toothpick inserted in the center will come out clean when done. Will make three standard loaf pans. Also does well in a bunt or angelfood cake pan.
