This is an easy dish to make on a weekend and take it to work. This is an easy dish to make on a weekend and take it to work.
Number of Servings: 8


    1 cup diced onion
    2 1/2 cups Portabella mushroons
    1 Tbsp Olive Oil
    12 oz. Moose/Pork Sausage 50/50
    1 Red Green Pepper
    1 cup Cheddar Cheese shredded
    12 Large Eggs


Cook the sausage in olive oil for a few minutes Then add the mushroons, onion and red pepper and saute for a few minutes. Beat the eggs, add the cheese and meat mixture to the eggs and stir.
Spray a 9x13 pan with Pam and pour the mixture into the pan. Cook at 350 for about 30 minutes or until done.
