Number of Servings: 12

Ingredients

    Mix together the following:

    1 Box Betty Crocker Gluten Free (Yellow) Cake Mix
    2 cup Quaker Oats - Quick 1 Minute Oats
    3 medium Bananas, fresh or frozen
    1 tbsp Cinnamon, ground, (or to taste)
    0.33 tsp Nutmeg, ground, (or to taste)
    1 tsp imitation vanilla flavoring
    1 large Egg, fresh

    I use a wooden spoon and do not over mix.

    Divide the above mixture evenly between 12 muffin cups.

    I find recipes with Oats tend to stick so thoroughly spray your muffin pan and if you use paper liners I suggest spraying them as well.

Tips

I only had Quick Oats on hand. To make certain the recipe is GF make sure to use a certified GF Oats product.


Directions

Cook at 350F for 20-25 minutes. Use a toothpick to test for done-ness.

Remove from muffin tins and place on cooling rack (or else the bottoms may burn)
