    I use precooked turkey breast shredded (20 ounces)
    Dice 2 large onions of choice. I used yellow.
    Shred the cheese or buy it pregratted. ( 2 cups)
    5 - 8 inch tortilla's
    enchilada sauce 28 ounce can. ( I used mild )


You can change the "heat" of this buy changing to white onions or medium or hot enchilada sauce.


Turn over to 350 to preheat. I precook Turkey breast and have it on hand. Take the Turkey and shred it up into a large bowl. Dice the Onion and cook in a skillet with the Extra Virgin Olive Oil until tender/crisp, Add in the turkey and cook 3 minutes longer, stirring all the time. Put the turkey/onion mixture back into the large bowl. Stir in 1.25 cups of the cheese and stir well. Open the enchilada sauce and warm it in a small pan. Take 1/3 cup of enchilada sauce and spread on the bottom of a 13X9 pan. Take 1 tortilla put 1 teaspoon of the sauce on it and spread it around, take 1/5 of the meat mixture and center it down the tortilla, roll the tortilla over and place the enchilada seam side down in the cooking pan. repeat with the remaining tortilla's. Take the remaining sauce and cover the enchilada's with it. Making sure no parts aren't covered. Cook in preheated oven for 20 minutes. Remove and sprinkle the remaining shredded cheese evenly over the top. Put back in the oven for approx. 5 minutes. Serving size is 1 enchilada! Enjoy
