    1/2 c. butter, melted and cooled
    3 eggs
    2/3 c. sugar
    1 tsp. vanilla or French vanilla extract
    1 c. flour
    1/4 c. cornstarch
    1/2 tsp. baking powder
    1/4 tsp. salt
    1/3 c. sweetened shredded coconut


Preheat oven to 375 degrees. Butter madeleine pans or cupcake pans work just as well.
In a bowl, beat eggs, sugar, and vanilla for about three minutes, or until light yellow and fluffy. Add margarine and mix. Sift together flour, cornstarch, baking powder and salt and then stir into the batter with a rubber spatula. Stir in coconut.
With a soup spoon or a small scoop, drop the batter into the pans. Fill the madeleine shells till they are almost full, and cupcake pans only about 1/5. Bake for 10-12 minutes, until they spring back when pressed. Tap our of madeleine pans and allow to cool. If using cupcake pans, loosen edges and carefully and lightly lift out with a knife.
OPTIONAL: Dust with powdered sugar.
