    2 eggs
    Zest and juice of one lemon
    Dash of salt
    1 c. sugar
    1/3 c. light sour cream
    1 1/4 c. flour
    2 1/2 tsp. baking powder
    1/4 c. margarine, melted


Preheat oven to 400 degrees. Grease bread pan lightly.
Whisk together eggs, lemon zest, lemon juice, salt and sugar in a large bowl. Fold in sour cream, flour, and baking powder. Gently fold in fold in melted margarine and mix just until combined.
Pour batter into bread pan and bake for 8 minutes, then lower the temperature to 325 degrees and bake for 25-30 minutes or until knife inserted in middle comes out clean. Allow to cool for about 5 minutes in pan, then loosen sides and turn out onto a wire rack.
OPTIONAL: Lemon Drizzle
Measure 1 cup powdered sugar into a bowl. Add juice from one lemon and just a pinch of salt; mix until smooth. Drizzle over top of warm bread and allow to cool with bread and set before serving.
