Ingredients

    Shortening, Crisco, 8 tbsp
    Applesauce, unsweetened, .5 cup
    Flour, white, 2 cup
    Whole Wheat Flour 1/2 cup
    Steel Cut Oats, dry, 2 cup
    Dates, 1 cup, pitted, chopped
    Coconut Flakes 1 cup
    Pecans, 1/2 cup, chopped
    Ground Flax Seed, 2 tbsp
    Egg, fresh, 3 large
    Granulated Sugar, 1 cup
    Brown Sugar, 1 cup, unpacked
    Vanilla Extract, 1 tsp
    Cinnamon, ground, 1 tsp
    Cloves, ground, 1/2 tsp
    *Diamond Crystal - Kosher Salt, 1 tsp
    Baking Soda, 3/4 tsp
    Baking Powder, 1 tsp

Directions

Mix shortening, apple sauce, sugars and vanilla together until light and fluffy. Add eggs one at a time beating well in between. Sift together dry ingredients except oats. Slowly add dry mix to wet. Once combined add coconut, nuts, and dates. Mix well. Bake at 350 for 12 mins or until golden brown. Let rest on cookie sheet for a few minutes before transferring to cooling rack.
