    1 tablespoon olive oil
    1 brown onion, finely chopped
    2 garlic cloves, crushed
    1/3 cup pine nuts, chopped (55 gr)
    750g turkey mince (if you can¡¦t get turkey use chicken)
    1 to 1 1/2 cups breadcrumbs
    ¾ cup basil leaves, finely shredded
    ¼ cup flat leaf parsley, chopped
    1 egg, lightly beaten


I used oatbran instead of breadcrumbs
1Kg turkey mince
Dried herbs instead of fresh
I got 12 slices - 1 slice was plenty with veggies!


1. Preheat oven to 180„aC. Lightly grease (with olive oil) a 7cm deep, 10cm x 20cm loaf pan.
2. Heat oil in a frying pan over medium heat. Add onion, garlic and nuts. Cook stirring for 8 minutes or until softened. Allow to cool.
3. Combine mince, breadcrumbs, herbs, egg, onion mixture and S&P. Mix well. Spoon mixture into pan. Press down. Bake for 40 minutes or until golden.
4. Stand in pan for 10 minutes. Serve with salad. Serve with tomato salsa or fruit chutney.
5. This is great for leftovers the next day and goes well served cold.
