    small chopped onion into small pieces
    5 tablespoons flour
    2 1/2 cups 1% milk
    4 cups chicken or vegetable broth
    10 ounces of fresh broccoli
    16 ounces grated sharp cheddar cheese


Cook onion is large pan with cooking spray, add flour using a whisk over medium heat for 3-5 minutes,

Stir constantly and slowly add the half and half. Add the chicken or vegetable stock, whisking all the time, simmer for 20 minutes.

Add the broccoli, carrots and onion. Cook over low heat until the vegetables are tender for 20-25 minutes. The soup should be thickened by now.

Pour batches in to a blender or if you have hand blender, that will work also. Puree about half of the soup mixture. Return to pot.

Add the cheese, stir until blended.

Serve, add more cheese on top if you like
