    1 qt Eggbeaters
    13 lite multi-grain English muffins
    13 slices turkey bacon
    6.5 slices of 2% swiss cheese
    1/2 c chopped fresh mushrooms


These can be wrapped in waxed paper, placed in a freezer bag, and frozen. Thaw in the fridge overnight and microwave at 50% power for 90 seconds.


Cook the turkey bacon and set aside. Mix the mushrooms into the Eggbeaters and cook throroughly. Toast the muffins lightly. Assemble the sandwiches with 1/13 of the egg mixture, 1 slice of bacon, and 1/2 slice of cheese
