Introduction

This was a favorite in my family growing up. It was dubbed "Fat Boy Soup" by a family friend because it is "good for fat boys who are trying to be thin". This was a favorite in my family growing up. Number of Servings: 10

Ingredients

    2 Stocks of celery
    2 medium carrots
    1 large yellow onion diced
    1 large or 2 medium potatoes
    1 cup diced rutabega (or turnips)
    1/2 cup green beans
    4 cups water
    1 tsp salt
    1/2 cup frozen peas

Directions

Bring everything (except peas) to a boil and let simmer for 15 minutes. Then add peas and let simmer for 5 more minutes. SEPERATELY, mix 1/4 cup flour with 1 cup milk until there are no lumps. Stir into simmering soup & simmer until it thickens.
* Optional: add a can of condensed cream of mushroom soup to make it more creamy.

Serving Size: makes 10 1-cup servings
