Introduction

Low carb ( 10 g net carbs per 1/4 of recipe!) alternative to regular bread sticks! This recipe is gluten free, dairy free ( if you skip the cheese on top). The bread sticks are NOT mushy and/or moist in the middle ( this happened to me with other cauliflower recipes). Ingredients

    - 3/4 large raw cauliflower head
    - 2 jumbo eggs
    - 1/4 c yellow cornmeal
    - 1/4 c almond flour
    - 1/2 tsp baking powder
    - 1 - 2 tsp garlic powder ( to taste)
    other spices to taste such as salt, pepper, italian seasoning, basil etc.

    optional: 1/4 shredded mozzarella cheese for topping


Directions

1. Break up the cauliflower into small chunks and sprinkle with salt and garlic powder.
2. Without adding any liquid, microwave the cauliflower for about 6 minutes until soft. Cool slightly.
3. In a food processor, process cooked cauliflower, eggs, cornmeal, almond flour, baking powder, and spices.
4. Grease an 8x8 baking pan and spread the dough evenly ( the dough will look like a thick pancake batter)
5. Bake for 20 minutes at 450 F. Watch closely to prevent burning. Try to bake these as long as you can without burning. Top with cheese 2 minutes before done.
6. Let it cool for 10 minutes, then cut up into bread stick shape.
7. Enjoy with some marinara sauce ;)

Serving Size: Makes one 8x8 pan, serving size 1/4 pan
