    Mushrooms, fresh, 4 large
    egg white, fresh, 1 large
    *Pine Nuts, .5 tbsp
    Parmesan Cheese, grated, 1 tbsp
    westacre light cheese, 15 gram(s)
    couscous, 150 gram(s)
    Salsa - Tostitos Mild Chunky Salsa, 1 tbsp
    salt and pepper


we serve this with roast vegetable salad, or ceasar salad


peel mushrooms spray both sides with cooking oil and bake for 5 minute.
make up couscous as directed on package, I use Ainsley harriot roasted vegetable flavour.
Add pine nuts, egg white and half the cheese to couscous stir to combine
sprinkle salt & pepper and a little cheese into mushrooms top with couscous pressing down slightly
add a bit of salsa , then the remaining cheese
bake in mederate to hot oven on lined roasting tray for 20-30 mins
