Ingredients

    2 cups unsweetened coconut milk beverage (the kind in the box or the refrigerated section)

    teaspoon vanilla extract

    teaspoon coconut flavouring (optional)

    2 teaspoons matcha green tea powder

    3 tablespoons amber agave nectar

    cup black chia seeds

    Fresh fruit to top

    Raw cashews

    Salt



Directions

1) Warm 1 cup of coconut milk in the microwave for 1 minute on HIGH.

2) Add agave, vanilla, coconut flavouring and matcha green tea powder, and whisk thoroughly until the green tea is mostly dissolved.

3) Pour into a large jar (with a tight-fitting lid), and add the rest of the coconut milk. Add a pinch of salt.

4) Add chia seeds, put the lid on and shake vigorously. Let it sit for 5 minutes, then shake the jar again. Chill overnight in the fridge, shaking whenever you remember, and serve with fresh fruit and cashews in the morning!
