    1# fresh or frozen large shrimp in shells
    3 med. seedless tangerines
    3/4c water
    1/3c sugar
    1t. whole black peppercorns, coarsely crushed
    1 sm. pink grapefruit
    1/2t salt
    1/2t freshly gr. black pepper
    1/4t cumin
    1T canola oil


1. Thaw shrimp, if frozen. For Pepper-Citrus Sauce: Remove 2-3 strips of the thin outer peel of one of the tangerines with a veg. peeler (taking care not to remove the bitter white pith). Place peel in small saucepan; add water, sugar & peppercorns. Bring to boiling, stirring to dissolve sugar. Boil gently, uncovered for 15-20min. stirring occasionally.
2. Meanwhile, peel & devein shrimp, leave tails intact. Peel & remove white pith from remaining tangerines & grapefruit. Cut grapefruit crosswise into 1/2" thick slices. Remove seeds & set slices aside.
3. For shrimp: in a bowl combine salt, gr. pepper & cumin. Add shrimp; toss to coat. In lg. skillet cook shrimp in hot oil for 3-4min. turning occasionally. Add fruit to shrimp. cover; cook over med. heat 1min. turning once. Transfer to serving bowl. Pour pepper-citrus sauce over shrimp mixture & toss gently to coat.
