    1 cup water
    1/2 cup quinoa
    2 links spicy turkey Italian sausage
    1/8 Tsp Kosher Salt, divided
    1/4 Tsp ground pepper
    1/2 cup crumbled garlic and herb goat cheese
    4 red bell peppers
    2 Tbsp. sliced fresh basil


1. Heat oven to 350 degrees
2. Follow instructions for making 1/2 cup of quinoa.
3. Remove casing from sausage. Cook in a medium nonstick skillet over medium-high heat until browned. Be sure to stir until crumbled.
4. Bake for 55-60 minutes
3. Remove from heat and stir in quinoa, 1/4 tsp salt, pepper, and 6 Tbsps Goat Cheese
4. Cut tops off peppers, discarding the seeds and membranes inside. Sprinkle remaining salt inside peppers and then stuff with 1/4 of the sausage mixture per pepper.

Serving Size: One Stuffed Pepper, Serves 4
