Ingredients

1 cup all-purpose flour
3/4 cup whole wheat flour
1 1/2 tsp baking powder
1 1/2 tsp ground cinnamon
3 tbsp canola oil
1/3 cup light brown sugar
1 egg
1 egg white
1 can sweet potatoes (15 oz) drained and mashed
1/2 cup fat-free milk
1 1/2 cups baking apples, peeled cored and chopped
1/3 cup walnuts chopped
Tips
Coat the cupcake liners with nonstick cooking spray to keep the muffins from sticking to the paper.
Directions
Preheat oven to 400 degrees.
In a large bowl, combine the flours, baking powder, and cinnamon. In a medium bowl, combine the oil, brown sugar, eggs, sweet potatoes, and milk until well mixed.
Make a well in the center of the flour mixture and add the sweet potato mixture, stirring until just moist. Do not over mix. Fold in the apples and walnuts.
Spoon batter into paper lined or non-stick muffin tins, filling 3/4 full. Bake for 20-25 minutes until the muffins spring back when touched lightly in the center.
Serving Size: makes 18 muffins, 1 muffin per serving
