    White Rice, Uncle Ben's long grain, 1.5 cups raw
    1/2 cup frozen peas
    Butter, 3 tbsp
    Onions, raw, 1 medium
    Chicken stock, 3 cups
    Parmesan or Pecorrino romano Cheese, grated, .5 cup
    1 tsp salt
    1/4 tsp pepper


You can add additional veg's such as pepper, celery, carrots, corn, zuccini, mushrooms, or whatever you have. If you do, add them when you add the onions in the beginning.


Chop onion in small dice
Place butter in Pot, over low heat
Add the veg's and Saute the veg's just till they shimmer do not brown
Add the rice stir to coat with veg's
add the salt and pepper
Add the stock boil one minute then cover. Cook for 20 minutes. When the rice is cooked (there will be holes in top) shut the heat and add the cheese and stir. Let sit covered on the stove for 5 minutes. adjust seasongs with additional Salt and pepper to taste. (shouldn't need too much salt as the chicken stock and grated cheese is salty)

Serving Size: 1/2 cup serving - Makes 8 servings
