    1 1/2 cup all purpose flour
    3 Tablespoons sugar
    1 1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    1 teaspoon salt
    1 1/2 cup buttermilk
    3 tablespoons canola oil
    2 large eggs


combine dry ingredients in a large mixing bowl. In a smaller bowl mix buttermilk, oil & eggs. Combine quickly into dry ingredients. Use 1/4 cup of batter for 1 pancake on a hot griddle sprayed with cooking spray. Cook until bubbles form then turn and cook on other side.
