Introduction

A fluffy, full of flavor gluten and dairy free pancake. A fluffy, full of flavor gluten and dairy free pancake.
Number of Servings: 12

Ingredients

    2 cups Arrowhead Mills All Purpose Gluten Free Flour
    1 tsp baking powder
    1/2 tsp cinnamon
    2 eggs
    2 TBS rice bran oil (canola or vegetable oil will work too)
    2 cups vanilla almond milk
    1 cup Ghiradelli 60% bittersweet chocolate chips

Tips

Since these pancakes puff up quite a bit, and you prefer thinner pancakes you can add more liquid to the batter to thin it out before pour 1/4 cup of the batter into the pan.


Directions

Add all ingredients into a large bowl and whisk together until well blended. Preheat a large skillet over medium-low heat, and spray with cooking oil. (Make sure there is no dairy or gluten in the spray.) Using a 1/4 measuring cup, scoop out the batter and pour into pan. You may need a spoon or spatula to help get the batter out as it will be thick. Cook for about 3 minutes on side and about 3 minutes or so on the other side. Continue with remaining batter.

Serving Size: Makes 12 - 1/4 cup pancakes.
