Ingredients

    Cooking Oil spray
    2 (10 oz) packages of frozen , chopped spinach, thawed
    1 large onion , chopped
    3 cloves garlic, minced
    1 tablespoon olive oil
    1 cup low-fat cottage cheese, drained
    4 ounces feta cheese, crumbled
    2 large eggs, beaten lightly with 2 tablespoons milk
    1 teaspoon Italian seasoning
    1/4 teaspoon black pepper
    1/2 cup grated Parmesan Cheese
    1 tablespoon butter, at room temperature

Directions

1. preheat the oven to 350 degrees F. Lightly cat a 9-inch pie plate with the cooking oil spray.

2. place the thawed spinach in a colander and squeeze out any excess water. Transfer the spinach to layered paper towels and press out the remaining water. Set aside.

3. In a medium saucepan over medium heat, cook the onion and garlic in the olive oil until translucent, about 8 minutes.

4. Stir the spinach, cottage cheese, feta cheese, eggs, and seasonings into the onion mixture.

5. Spoon the mixture into the prepared pie plate. Sprinkle wit the Parmesan cheese and dot with the butter.

6. Bake uncovered for 30 to 35 minutes, or until a knife inserted near the center comes out clean. To serve, cut into six wedges.
