Ingredients

    1 large Onion
    4 Medium Eggs
    Salt to taste
    1 tsp Red or Cayenne Pepper powder
    1/4 tsp Ground Turmeric
    1 tsp Ginger and Garlic Paste (or 1/4 tsp each powder)
    3 Green Chilies or Hot peppers
    1 tbsp chopped Cilantro chopped

Directions

Chop Onion and add to pan along with salt, red pepper or cayenne pepper powder, ground turmeric,ginger and garlic paste. Let it cook until the onion is transparent. Add the green chilies and cilantro. Spread the onion and make small dents in four corners. Add the eggs one in each dent and cover. Turn the heat down slow and let cook for 10 mins or until the egg yolk looks cooked.

    Very Good
    This was pretty good! I used egg whites & just a tbs of evoo. Cut down on the calories dramatically. This is a spicy breakfast but not so much spice that you can't enjoy it. Will make again. - 4/4/13
