    4 boneless skinless chicken breasts (about a lb)
    1 T margarine
    3 T olive oil
    3 cloves garlic, minced
    1/2 t seasoned salt
    1/2 cup bread crumbs
    1/2 cup fresh grated parmesan cheese

    (Calorie counts have been halved for everything except chicken to account for breading leftovers)


Don't skimp and get the pre-grated Kraft style parmesan cheese. Get a block of parmesan cheese and grate's worth the effort! It actually melts! I also use italian seasoned bread crumbs for extra flavor.


Preheat oven to 475 deg. In a microwave safe shallow bowl, combine margarine, olive oil, garlic and seasoned salt. Microwave for about 30 sec, or until margarine is melted. In another shallow bowl or pie plate, combine bread crumbs and cheese. Dip chicken breasts first in the oil mixture, then in bread crumbs. Place in ungreased pan. Repeat for all chicken breasts, then cook for 20 to 25 minutes.
