Great for breakfast, lunch or dinner. Great for breakfast, lunch or dinner.
Number of Servings: 2


    Onions, raw, .5 cup, chopped
    Ham, chopped small, 4 thin deli slices
    Tomatoes, sliced, 1 cup
    Egg, fresh, 2 large
    Egg Substitute, 0.5 cup
    Parmesan Cheese, grated, 2 tbsp
    Avocado, whole, medium


Serve with salsa. Add a small salad for lunch or dinner.


Spray skillet with non-stick spray if necessary and heat on medium
Sautee onions until translucent
Add tomatoes and heat through, turn heat to low
Combine eggs & egg substitute in a bowl and pour over veggies
After eggs set sprinkle with parmesan and place under broiler until bubbly & browned
Slice or chop avocado and put on top

Serving Size: 1/2 pan
