    2 c zucchini, grated
    2 eggs, beaten
    1/8-1/4 c onion, chopped
    1/2 c mashed potato flakes
    1/2 c Parmesan cheese
    1/2 c Mozzarella cheese
    2 tbsp canola oil
    salt & pepper to taste


Sour cream goes well on top of fritters.


In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt. Mix well.

Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, press down slightly, and cook for a few minutes on each side until golden.
