    1 med yellow onion, 1 serving
    Olive Oil, 1 tbsp
    Cremini Mushroom, 1360 gram (2 large containers)
    Mushroom, white button, 1360 gram (2 large containers)
    Sherry, dry, 4 fl. oz
    Garlic, 6 cloves
    Better than Bouillon - organic vegetable, 2 tsp
    Water-hot 2.5 cup
    Fat Free Milk 6 oz
    Whole Milk 6 oz
    Fresh Thyme
    Fresh Parsley


Saute onion in 1 tbs olive oil and Pam cooking spray combo till caramelized and add garlic. Stir in one package of mushrooms at a time as you get them sliced adding Pam as needed (reserving small mushroom buttons to add later). Mushrooms should release a nice amount of liquid in pot. In a separate cup add bouillon to hot water and stir till dissolved. Pour vegetable stock into pot and stir. Using a stick blender puree soup till desired consistency is reached. Add 2 types of milk, reserved mushroom buttons (chopped in chunks) and fresh herbs. Salt and pepper to taste. Cover and simmer at a low heat for 10 more minutes.
