Introduction

Ingredients

Glaze
1/2 c. ketchup
2 T. molasses
1 t. chili powder
2 T mustard
1/4 c. water
Meatloaf
1 c. dry oatmeal
1 small onion diced
1/2 large green or red pepper, diced
2 cloves garlic
1/2 c. sunflower kernals
1 can drained rinsed chickpeas ( 19oz)
1 can drained rinsed pinto or red kidney beans ( 19oz)
2 T. chili powder
2 T. vegan Worcestershire sauce
salt and pepper to taste
Tips
If you do not have a processor, mash the beans with a potato masher and then add finely chopped veggies, seeds and spices.
Directions
1. Preheat oven to 375
2. Whisk together all glaze ingredients and set aside
3. In a food processor, pulse the oats until well chopped but not powder.
4. Add onion, green pepper, garlic and sunflower seeds and pulse again until well combined.
5. Add all the drained beans, chili powder, Worcestershire, salt and pepper. Pulse until the beans are nearly pureed. Leave a bit of texture.
6. Spoon mixture into a greased loaf pan and even out.
7. Spoon glaze over bean mixture.
8. Bake for 30-35 min or until glaze in caramelized and loaf is solid.
9. Use a non metallic spatula to slice into the finished loaf. Slices lift easily.
